I am so ready to eat this salad! What about you???
I am really craving fresh fruit and vegetables lately and this Green Goddess Kale and Quinoa Salad will do the trick. It’s packed full of fresh kale, juicy pomegranate and an herb-loaded dressing so you can feel better about having that extra plate of food at Christmas dinner.
I haven’t talked to you guys in awhile, which is totally my fault, but it just hasn’t been a great few weeks for our family. A relative passed away just before Christmas and it just didn’t feel right to blog over the holidays. I wasn’t really up to cooking much and no one really wanted to eat, so since most of our stuff was still in boxes from the move, it’s been Kraft dinner and tuna melts most nights (also delicious, but not blog-worthy!). While it’s been a sad Christmas holiday, it was still nice to see our extended family over the last few weeks. I don’t get to see them often and so we got to spend Christmas dinner with everyone which was special.
But moving on and back to how much I LOVE this salad!! I promise I didn’t make a New Year’s resolution to eat healthier and I’m definitely not on any detox – I just really REALLY wanted this salad. Do you ever crave salads after the holidays? I think my body is begging for something NOT smothered in cheese (I think I said something sacrilegious to the food world, but it’s true). So, I’m embracing my craving for vegetables with this kale and quinoa salad today and maybe next week I’ll be diving into an extra large bowl of 4 cheese macaroni because balance! Am I right?
Healthy food doesn’t have to be boring, and this kale and quinoa salad is definitely NOT boring. It’s freaking good healthy food and that’s the best of both worlds!!
This salad is full of quinoa, kale, apples and avocado and then dressed in a green goddess dressing that is lightened up with Greek yogurt. I topped the salad with grapefruit segments and juicy pomegranate arils. Make sure to massage the kale in olive oil first, before adding it to the quinoa, to help break it down which makes it less bitter.
Full disclosure, I meant to top it with toasted pine nuts but I forgot totally forgot them! If you can, definitely use pine nuts on top for extra crunch!
- 2 cups of chopped kale
- 1 tbsp olive oil
- 1 tsp kosher salt
- 2 cups cooked quinoa
- ½ apple, sliced thin
- ½ avocado, sliced
- pomegranate arils
- grapefruit segments
Green Goddess Dressing:
- 1 cup Greek yogurt
- 1 garlic clove
- 2 tbsp lemon juice
- ½ cup parsley leaves
- 3 tbsp chopped chives
- 1 tsp salt
- ½ tsp pepper
- Make the dressing by placing the ingredients in a food processor. Pulse until smooth and thin with water if necessary until it forms a dressing.
- Place the chopped kale in a bowl and toss in the olive oil and salt. Gently massage the oil into the kale to help break it down. Add the quinoa and toss with ¼ cup of dressing. Top with apple slices, avocado, pomegranate arils and grapefruit segments. Drizzle with more dressing before serving.
