A green smoothie that tastes good?? I know, some of you seriously questioning unsubscribing from this blog. But give me a chance!! This spinach smoothie doesn’t TASTE like spinach, I promise. It’s super refreshing since I packed it full of mint and the taste of kiwi and grapefruit give a sweet, tart taste that you can’t get enough of. This smoothie deserves a spot on your smoothie roster!
This smoothie has saved me this week! Seriously, since we’ve been so busy, breakfast has been low on my priority list (bad Priya!) but this recipe has gotten me through it. I’ll be honest, most days I’m lucky to run out the door with a coffee in hand, but since I started making this smoothie, I can’t get enough of it! I prepped this smoothie over the weekend and I blend it up before running out the door on the way to work. Morning win!
My FAVOURITE part of this smoothie is the fresh herbs, mint to be more exact. If you can add the fresh mint, PLEASE DO!! I love the refreshing taste and it instantly wakes me up when I’m driving in to work. The mint flavour still surprises me when I drink it. It’s just so flavourful and energising, I can’t get enough of it! And after you start adding fresh herbs to your daily smoothie, I promise you won’t want to stop!
And then there’s the fruit, sweet and juicy. I used fresh kiwi, apple and grapefruit. The smell from the grapefruit instantly woke me up and the kiwi adds the perfect amount of sweetness.
- 1 cup milk
- ½ cup Greek yogurt
- 1 handful spinach
- 10 mint leaves
- 1 kiwi, peeled and cubed
- 1 grapefruit, peeled/de-seeded and cut into segments
- 1 tbsp honey (can substitute with maple syrup, agave syrup)
- 1 tbsp chia seeds (or oats, hemp seeds, quinoa)
- ½ apple, peeled and roughly chopped
grapefruit segments, mint sprigs, lemon zest, chia seeds for garnish
- Combine the milk, greek yogurt, spinach, mint, fruit, honey and chia seeds in a blender. Blend until smooth. Top with more fruit, mint sprig, lemon zest and/or seeds to garnish. Enjoy!
