I’m obsessed with peanut butter and jam sandwiches lately. Maybe it’s because I haven’t eaten them in awhile, but lately, I can’t get enough of it! It’s sweet and sticky and I feel like a kid every time I bite into that sandwich. They’re so easy to make, which means I’ve been eating MORE than my fair share of them, but I’m OK with that! Since I’m sure you would disown me if I posted a PB&J sandwich on the blog, these peanut butter and jam quesadillas feel a little more grown up without sacrificing any of that delicious, gooey taste! They’re sweet and so sinfully simple to make that you’ll be eating them over and over again. I know I did!
Also, I couldn’t figure out if these should be categorized as “breakfast”, “dessert” or “snack”?!?!? Help me out guys, what do you think? I would gladly eat these any time of the day, but what would be considered socially acceptable!? I’m leaving this up to you guys, but for now I’ve put them under “snack” until otherwise stated by said readers.
Anyways, we’ve started packing up our house to move and that includes all the food in the cupboards and fridge. I’m trying to clean out the fridge and cook with anything we have when I came across our peanut butter. Good ol’ peanut butter to the rescue! In between packing and more packing, I’ve been making these peanut butter and jam quesadillas. Sometimes it’s peanut butter and jam on a spoon (am I the only one who does this???) but I’m classing it up for you guys (you’re welcome!) and I turned on the stove for this recipe. Who’s a grown up now!
These PB&J quesadillas are so good, I’m warning you now! As you bite into it, the peanut butter oozes out and the sweet berry jam sticks to your fingers. The tortillas are slightly crunchy, warm and buttery as you sink your teeth into it. If you’re fancy, sprinkle a little icing sugar over top for an extra sugar high! I strongly recommend it!
I don’t think it’s possible to get sick of peanut butter and jam but these quesadillas make it even better. You can add sliced banana or apple or switch out the jam for Nutella to make it extra sinful (go on, I won’t judge you) but PB&J is a staple combination that I’m not messing with, we’re purists over here!
- 2 tortillas
- 3 tbsp peanut butter
- 3 tbsp berry jam (strawberry or raspberry work best!)
- 1 tbsp butter
- icing sugar
- spread 1 and ½ tbsp of peanut butter and jam on half of each tortilla. Fold over the tortilla to make a semicircle.
- In a large skillet, heat the butter over medium heat until melted. Place the tortilla sandwich on the skillet and cook for 1-2 minutes on each side until the tortilla crisps up and browns. Remove from heat and sprinkle icing sugar over top. Cut in half and serve!
