These pineapple and passion fruit spritzers are perfect for spring! I love the smell of passion fruit, it makes me wish for a vacation on a sandy beach, instead of at home battling between turning on the A/C or hiding under a blanket with layers of clothes on. All I want to do is sip these on a patio, preferably while eating something barbecued. And I love the subtle taste of mint in this drink, it makes it that much more refreshing and addictive!
Lately I’ve been feeling totally uninspired by food blogging. Maybe it’s all in my head, but it can be incredibly frustrating when you have a plan in your head, but the food just doing look at all what you were hoping for it be. But I absolutely LOVE doing this, between the frustrations is a success, a rush of excitement when the food tastes delicious AND the photos look great too (or at least what I think looks great!). That feeling is hard to give up, and its probably why I push myself to do it, week after week.
Food blogging challenges me. It’s a different kind of problem solving, fixing a recipe, redoing the photos for the third time because you know it could be better, time managing between a full time job and growing a blog in an ever growing world of food bloggers. I can’t count the number the times I’ve finished work late and had to run into the grocery store only minutes from them closing, being the only remaining customer at the till and getting dirty looks from the cashiers. Oops! Or finished up a blog post at midnight because I know I won’t get a chance tomorrow.
So I don’t know how to get out of this funk, but I’m going to keep trying. I know it’s within my control, and the challenge keeps me going. And why not start with these pineapple and passion fruit spritzers!?! The name just sounds so inviting and irresistible! These spritzers are non-alcoholic, but don’t let that stop you from sneaking in a cheeky shot of rum (or sparkling wine if you’re feeling fancy!!) for an easy spring or summer cocktail.
This spritzer will be a perfect patio drink. It’s refreshing and incredibly fruity and minty. It’s so easy to drink A LOT of these before you realize you’ve drank your weight in pineapple juice! And the passion fruit? That smell is all I need in life. It’s tropical, sweet, and super fragrant. I always feel like I should be on a beach somewhere as I cut open the fruit. These spritzers are topped with club soda and a sprig of mint to waken up your taste buds even more!
- 6 mint leaves
- 4 lime wedges
- 1 cup pineapple juice
- juice of 2 passionfruit
- crushed ice
- club soda
- mint sprigs
- In a jug, add mint leaves and lime wedges and gently bruise with the end of a wooden spoon. Add pineapple juice and passionfruit then stir. Add crushed ice to a glass and strain juice mixture over the ice. Top with club soda and a mint sprig then serve.
