Happy December everyone! And that means I’ve already started to plan our family Christmas dinner. For reals! I have a word document with recipes, ideas and a cooking schedule for the day of. I’m excited to get my cook on in the next few weeks because my parents have left me in charge of E-V-E-R-Y-T-H-I-N-G for our dinner! Except the turkey….I don’t think they trust me with the turkey yet. Ha! Although I can’t blame them – there was a turkey incident in 2005 that I will never live down. But this also means that I get to plan the cocktails which is my favourite part! We’ll be starting with these hibiscus tea and pomegranate champagne spritzers that will make your holiday guests feel totally spoiled.
I want to drink these every weekend, but I’m saving this cocktail for Christmas Day. What are you guys planning for the holidays? Are you hosting? Or maybe you get to make a mess in someone else’s kitchen (like I am??!!). I’ll be cooking in my parents’ house this year, which I love because someone else always ends up cleaning it up and I don’t have to face the mounds of dirty dishes. Since I’ve started planning the menu, I’m finding it so hard to make a decision. Every time I decide on a recipe or side dish, something pops up on my social media feed that ends up being a game changer. So help me choose, what are your favourite holiday recipes? Are there some recipe winners that you stick to every year? I’m curious.
In the mean time, I’ll serve these cocktails! The hibiscus tea and pomegranate juice combination makes me think it’s a “summer meets winter” kind of cocktail. Hibiscus iced tea is so lovely and refreshing in the summer, but when it’s paired with pomegranate, it makes the perfect winter holiday cocktail! Don’t you love when a recipe comes together like that? And then it’s topped with a generous pour of champagne to really make it feel special. You could easily sub the champagne with some sparkling water to make it a mocktail so everyone feels included.
I love that these drinks aren’t overly sweet either. The pomegranate juice is tart and the hibiscus tea is only slightly sweetened so you don’t feel a huge sugar rush (and drop!) after drinking these. You can even make a bigger batch of the hibiscus tea and pomegranate juice before everyone comes over, then as everyone arrives for the party, pour the mixture into each glass and top with the champagne. It’s a “no fuss no muss” recipe that is seriously delicious and doesn’t take a lot of mixing, shaking or stirring. Cheers!!
- 2 cups water
- ¼ cup dried hibiscus flowers
- 1 tbsp honey
- 2 oz hibiscus tea
- 1 oz pomegranate juice
- 1 basil leaf
- Make the hibiscus tea by combining the ingredients in a small saucepan. Heat over medium heat and stir every 1-2 minutes until honey dissolves. Let it simmer for 5 minutes then take off the heat. Steep the hibiscus leaves in the water for another 10 minutes. Discard the leaves and reserve the tea.
- To make the cocktail, combine the tea and pomegranate juice in a cocktail shaker. Add the basil leaf (bruise it with your fingers slightly before adding it to the shaker) and ice. Shake vigorously for 30 seconds then strain into a glass. Top with champagne and serve!
